I have lived here in Fort Collins since 1986, but grew up in Dallas, TX. My life is lived in thirds...
- I'm here at CSU in a few capacities: As adjunct faculty teaching undergraduate courses (BUS201- Foundations in Sustainable Enterprise, and BUS405 Entrepreneurship Capstone for business minors); an Instructional Coordinator for BUS634 Sustainable Venturing and the New Energy Economy; finally, I'm slowly working on a PhD over in the College of Natural Resources (intersection of Entrepreneurship, Sustainability, and Tourism).
- I got laid off in 2008 when the economy tanked, which gave me the chance to pursue a specialized MBA at CSU. This lead to my youngest brother, wife and I embarking on a crazy entrepreneurial journey of launching and running two cheese related businesses, The Welsh Rabbit Cheese Shop, and The Welsh Rabbit Bistro. You can find us on HERE or of course on FB, and we try to keep up on Instagram (Shop). Late last year we pivoted, and combined The Shop and The Bistro, into one business. We essentially have four "primary secondary" revenue streams: Cheese Shop, Wine Bar, Specialty Market, Wine Bottle Shop. My wife and I also own Nita Crisp Crackers.
- Last, but definitely not least, is my family life. I'm married to my best friend since 1989, and we've got two great young adult kids, one of whom is married.
While my life is crazy-busy, I am enjoying myself. I find deep satisfaction mentoring and teaching in the classes I'm involved with here at CSU. I enjoy academia, and, I believe that education should bolster your inspiration and be imminently practical to your day-to-day to work, which is what I find in my own work at The Welsh Rabbit and Nita Crisp.
